Homemade Chicken Noodle Soup

A comforting and nourishing chicken noodle soup, perfect for warming up on chilly days.

Ingredients

  • 1 whole chicken or 2 pounds chicken thighs
  • 8 cups chicken broth
  • 2 cups egg noodles
  • 4 carrots, diced
  • 2 ribs celery, diced
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried parsley
  • Salt and pepper to taste

Instructions

  1. Prepare the chicken: In a large pot, bring the chicken and chicken broth to a boil. Reduce the heat and let it simmer until the chicken is cooked through, about 30 minutes. Remove the chicken, let it cool, and shred the meat, discarding the skin and bones.
  2. Sauté the vegetables: In the same pot with the broth, add the diced carrots, celery, onion, and minced garlic. Cook over medium heat until the vegetables are tender, about 5-7 minutes.
  3. Combine ingredients: Return the shredded chicken to the pot. Add the egg noodles, thyme, and parsley. Cook until the noodles are tender, about 10 minutes.
  4. Season and serve: Taste the soup and season with salt and pepper to your liking. Serve hot, garnished with fresh parsley if desired.

Notes

A whole chicken provides rich flavor, chicken thighs are a convenient alternative. Homemade broth is ideal, but store-bought works too. Egg noodles add comfort, but you can substitute with whole wheat or gluten-free options.
