A comforting casserole featuring tender chicken simmered in a rich apple cider sauce, flavored with fresh herbs and sweet apples.

Ingredients

  • 4 chicken thighs
  • 4 chicken legs
  • 1 cup apple cider
  • 2 apples, fried
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • Fresh thyme, to taste
  • Salt and pepper, to taste
  • 2 tablespoons olive oil

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Heat the olive oil in a large skillet over medium heat.
  3. Season the chicken thighs and legs generously with salt, pepper, and thyme.
  4. Brown the chicken in the skillet for about 5-7 minutes, then remove and set aside.
  5. Sauté the onions and garlic in the same skillet until translucent, about 3-4 minutes.
  6. Deglaze the pan with apple cider, scraping up any bits stuck to the bottom.
  7. Add the browned chicken back to the skillet, ensuring it’s surrounded by the cider mixture, and cover.
  8. Bake for 45 minutes to 1 hour until the chicken is cooked through and tender.
  9. Prepare the apples by slicing them into wedges and frying until golden brown, about 5 minutes.
  10. Serve the casserole hot, topped with fried apple wedges.

Notes

Allow enough time for the chicken to brown and enhance the flavor. Use fresh herbs for best results. Check chicken for doneness by ensuring juices run clear.
