Delightful Halloween treats filled with a sweet and creamy filling, perfect for parties or cozy nights.

Ingredients

  • 2 cups all-purpose flour
  • ¾ cup unsweetened cocoa powder
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon table salt
  • ¾ cup unsalted butter (1 ½ sticks, room temperature)
  • ¾ cup light brown sugar
  • ¾ cup granulated sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • ¾ cup buttermilk
  • ½ cup unsalted butter (1 stick, room temperature)
  • 2 cups confectioners’ sugar
  • 2 tablespoons milk
  • 1 teaspoon vanilla extract
  • 40 mini marshmallows
  • 40 candy eyes
  • ¼ cup melted white chocolate
  • Green food coloring

Instructions

  1. Prepare the dry ingredients by whisking flour, cocoa powder, baking powder, baking soda, and salt in a bowl.
  2. Cream the sugars and butter until light and creamy, about 3 minutes with an electric mixer.
  3. Add the eggs and vanilla to the mixture and beat until combined.
  4. Incorporate the buttermilk and dry ingredients alternately, mixing until just incorporated.
  5. Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
  6. Scoop the batter onto the prepared cookie sheets, spacing rounds 2 inches apart.
  7. Bake for 13 to 14 minutes, until cookies are puffed and slightly cracked, then cool on wire racks.
  8. Make the filling by beating together unsalted butter, confectioners’ sugar, milk, and vanilla until smooth.
  9. Assemble the whoopie pies by spreading filling on one cookie and topping with another.
  10. Decorate with melted white chocolate, mini marshmallows for hair, and candy eyes to bring them to life!
