A simple yet delicious Italian classic, spaghetti aglio e olio combines garlic-infused olive oil and red pepper flakes for a quick and satisfying meal.

Ingredients

  • 12 ounces spaghetti
  • 6 cloves garlic, thinly sliced
  • 1/2 cup extra-virgin olive oil
  • 1/2 teaspoon red pepper flakes
  • 1/4 cup fresh parsley, chopped
  • Salt, to taste
  • Grated Parmesan cheese (optional), for serving

Instructions

  1. Bring salted water to a boil in a large pot, then add the spaghetti and cook until al dente.
  2. Reserve 1 cup of pasta water, then drain the rest.
  3. Add olive oil to a large skillet over medium heat.
  4. Cook the sliced garlic until golden and fragrant, about 1-2 minutes.
  5. Stir in red pepper flakes and cook for an additional 30 seconds.
  6. Toss the drained spaghetti in the skillet, adding reserved pasta water as needed for moisture.
  7. Stir in chopped parsley and season with salt to taste.
  8. Serve immediately with grated Parmesan cheese if desired.

Notes

Keep an eye on the garlic to prevent burning. Adding reserved pasta water helps emulsify the sauce.
