A classic comfort dish that warms the heart and fills the belly, this homemade mac and cheese is creamy, cheesy, and super easy to make.

Ingredients

  • 2 cups elbow macaroni
  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • 2 cups whole milk
  • 2 cups shredded cheddar cheese
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Optional toppings: bread crumbs or additional cheese

Instructions

  1. Cook the Pasta: In a large pot of boiling salted water, cook the pasta according to package instructions until al dente. Drain and set aside.
  2. Create the Roux: In the same pot, melt the butter over medium heat. Whisk in the flour and stir continuously for about 1-2 minutes until it turns a light golden color.
  3. Add the Milk: Gradually pour in the milk, whisking constantly to prevent lumps. Continue cooking until the mixture thickens, approximately 3-4 minutes.
  4. Stir in the Cheese: Remove the pot from heat and stir in the shredded cheese until fully melted and smooth.
  5. Combine Pasta and Sauce: Add the cooked pasta to the cheese sauce, stirring well to coat all the pasta evenly. Season with salt and pepper to taste.
  6. Serve or Bake: Serve the mac and cheese immediately or pour it into a baking dish and top with breadcrumbs or more cheese, and bake at 350°F (175°C) for 15-20 minutes until bubbly and golden.

Notes

Use freshly shredded cheese for the best texture and flavor. Feel free to customize with veggies or spicy add-ins.
