A warm, creamy bowl of potato soup made effortlessly in an Instant Pot, perfect for busy weeknights or cozy weekends.

Ingredients

  • 4 large potatoes, peeled and diced
  • 4 strips of bacon, chopped
  • 1 onion, chopped
  • 3 cups chicken broth
  • 1 cup heavy cream
  • 1 cup cheddar cheese, shredded
  • Salt and pepper to taste
  • Green onions for garnish (optional)

Instructions

  1. Set the Instant Pot to sauté mode and cook the bacon until crispy. Remove the bacon and set aside, leaving the grease in the pot.
  2. Add the chopped onion to the bacon grease. Sauté until the onion becomes translucent, about 3–4 minutes.
  3. Add the diced potatoes and chicken broth to the pot. Stir to combine, then return the cooked bacon to the pot.
  4. Close the lid, ensuring it’s sealed, and set the pot to cook on high pressure for 10 minutes.
  5. Once the cooking time is complete, carefully quick release the steam and open the lid.
  6. Add the heavy cream and shredded cheddar cheese. Stir until the cheese melts and everything is well combined.
  7. Season with salt and pepper according to your preference.
  8. Ladle the soup into bowls, and garnish with chopped green onions if desired. Serve hot and enjoy!
