Ingredients
1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
1 teaspoon salt
1/2 teaspoon black pepper
1 tablespoon olive oil
4 cloves garlic, minced
1/2 teaspoon red pepper flakes
1/2 cup white wine (or chicken broth)
1/2 cup chicken broth
1 tablespoon lemon juice
1/4 cup parsley, chopped
8 ounces angel hair pasta
2 tablespoons unsalted butter
Zest of one lemon
Instructions
Cook the pasta: Bring a large pot of salted water to a boil. Add the angel hair pasta and cook according to package instructions until al dente. Drain and set aside.
Season the chicken: Season the chicken pieces with salt and pepper.
Sauté the chicken: In a large skillet, heat olive oil over medium-high heat. Add the seasoned chicken and cook for about 5-7 minutes until golden and cooked through. Remove from pan and set aside.
Make the sauce: In the same skillet, reduce the heat to medium, add garlic and red pepper flakes, and sauté for about 1 minute until fragrant.
Add liquids: Pour in white wine (or chicken broth) and scrape up any browned bits from the bottom. Add chicken broth and lemon juice, simmer for about 3-4 minutes.
Combine everything: Return chicken to the skillet and stir in pasta, tossing to coat. Add reserved pasta water if mixture seems dry.
Finish with butter and season: Stir in butter, lemon zest, and chopped parsley. Mix well and serve immediately.
Notes
Keep an eye on the garlic to prevent burning. Use fresh herbs for maximum flavor.
