1 lb boneless, skinless chicken breasts or thighs
4 cups chicken broth
1 medium onion, diced
2 carrots, sliced
2 celery stalks, diced
2 cloves garlic, minced
1 tsp dried thyme

1 tbsp baking powder

4 tbsp unsalted butter, melted
Instructions
Sauté the vegetables: In a large pot, heat a tablespoon of oil over medium heat. Add the diced onion, carrots, and celery. Sauté for 5-7 minutes until softened. Add minced garlic and stir for an additional 30 seconds.
Cook the chicken: Add the chicken breasts to the pot, then pour in the chicken broth. Stir in thyme, salt, and pepper. Bring the mixture to a gentle boil. Reduce heat and cover, simmering for 15 minutes until the chicken is fully cooked.
Prepare the dumpling dough: While the chicken cooks, mix the flour, baking powder, and salt in a medium bowl. Stir in milk and melted butter until just combined. The batter should be thick but not dry.
Shred the chicken: Remove the chicken from the pot and shred it using two forks. Return the shredded chicken to the pot, mixing it gently with the broth and vegetables.
Add dumplings: Using a spoon, drop dollops of the dumpling batter into the simmering broth. Leave space between each dumpling, as they will expand while cooking.
Cook the dumplings: Cover the pot tightly and let the dumplings steam for 15 minutes without lifting the lid. You’ll know they are ready when they are puffed and cooked through.
