Effortlessly cooked chicken in a creamy, spicy sauce, perfect for busy weeknights.

Ingredients

  • 1.5 pounds boneless, skinless chicken breasts
  • 1 cup mayonnaise
  • 1-2 tablespoons sriracha (adjust for spice preference)
  • 1 tablespoon honey
  • 1 tablespoon rice vinegar
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • Green onions, chopped (for garnish)
  • Rice or lettuce leaves (for serving)

Instructions

  1. Prepare the Sauce: In a mixing bowl, combine the mayonnaise, sriracha, honey, rice vinegar, minced garlic, salt, and pepper. Stir until well blended.
  2. Add Chicken to Slow Cooker: Place the chicken breasts in the slow cooker and pour the sauce over them, making sure they are well coated.
  3. Cook: Cover and cook on low for 4 to 6 hours, or until the chicken is tender and fully cooked (an internal temperature of 165°F).
  4. Shred the Chicken: Once cooked, use two forks to shred the chicken directly in the slow cooker, mixing it with the sauce to coat evenly.
  5. Serve: Dish out the Bang Bang Chicken over rice or in lettuce wraps and garnish with chopped green onions.

Notes

For a creamier sauce, add an extra tablespoon of mayonnaise or use Greek yogurt as a swap. Store leftovers in an airtight container for up to 4 days.
