Ingredients
4 chicken thighs
Salt and pepper, to taste
1/2 cup bourbon
1/4 cup soy sauce
2 cloves garlic, minced
1 tablespoon fresh ginger, grated
1/4 cup brown sugar
1 tablespoon rice vinegar
1 teaspoon sesame oil
Green onions, for garnish (optional)
Instructions
Mix the sauce: In a bowl, combine the bourbon, soy sauce, garlic, ginger, brown sugar, rice vinegar, and sesame oil. Mix well until the sugar dissolves.
Prepare the chicken: Place the chicken thighs in the crock pot. Season them generously with salt and pepper.
Add the sauce: Pour the bourbon mixture over the chicken, ensuring each piece is well coated.
Cook: Cover and cook on low for 6-8 hours or on high for 3-4 hours. The chicken is done when it is tender and cooked through.
Shred the chicken: Once cooked, use two forks to shred the chicken into bite-sized pieces and stir it back into the sauce.
Serve: Serve warm, garnished with green onions if desired.
Notes
Don’t skip the marinade for enhanced flavor. For variations, consider adding veggies or adjusting sweetness.
