A delightful dish featuring tender chicken and soft gnocchi in a creamy sauce, all cooked in one pan for easy cleanup.

Ingredients

  • 2 tablespoons olive oil or sundried tomato oil
  • 1 pound chicken breast, cut into pieces
  • 16 ounces gnocchi
  • 1 teaspoon Italian seasoning
  • ½ teaspoon salt
  • ¼ teaspoon ground black pepper
  • 1 teaspoon smoked paprika
  • 2 tablespoons butter
  • 2 cloves garlic, minced
  • 1 cup chicken stock
  • 1 cup heavy cream
  • ⅓ cup sundried tomatoes, chopped
  • ½ cup grated parmesan cheese
  • 2 cups baby spinach leaves

Instructions

  1. Cook the chicken: In a large skillet, heat the olive oil over medium heat. Add the chicken pieces, seasoning with Italian seasoning, salt, and pepper. Cook for 5-7 minutes until the chicken is browned and cooked through.
  2. Add butter and garlic: Stir in the butter and minced garlic, cooking for an additional minute until the garlic is fragrant.
  3. Build the sauce: Pour in the chicken stock and heavy cream, bringing the mixture to a gentle simmer.
  4. Cook the gnocchi: Add the gnocchi to the skillet and cook according to package instructions, usually around 2-3 minutes until they float to the top.
  5. Incorporate vegetables and seasonings: Stir in the sundried tomatoes, smoked paprika, and spinach, mixing until the spinach wilts.
  6. Finish with cheese: Remove from heat and stir in the grated parmesan cheese until melted. Serve warm.

Notes

Don’t overcook the chicken; add fresh herbs for enhanced flavor.
