Ingredients

  • 1 pound Cajun-seasoned chicken breast, cooked and shredded
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 bell pepper, diced
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 1 cup Parmesan cheese, grated
  • 8 ounces pasta (such as penne or fettuccine)
  • Salt and pepper to taste
  • Chopped green onions for garnish

Instructions

  1. Sauté the vegetables: In a large pot, heat the olive oil over medium heat. Add the chopped onion, minced garlic, and diced bell pepper. Sauté until the vegetables are softened, about 4-5 minutes.
  2. Add the broth: Pour in the chicken broth and bring the mixture to a boil, stirring occasionally.
  3. Cook the pasta: Add the pasta to the boiling broth and cook according to package instructions until al dente, usually about 8-10 minutes.
  4. Stir in cream and cheese: Reduce the heat to low. Stir in the heavy cream and grated Parmesan cheese until the cheese has melted and the broth is smooth and creamy.
  5. Incorporate chicken: Gently fold the shredded Cajun chicken into the soup, and season with salt and pepper to taste.
