This hearty soup brings the comforting flavors of classic chicken pot pie into a creamy, nutritious dish perfect for cold days.

Ingredients

  • 1 lb chicken breast, cooked and shredded
  • 4 cups chicken broth
  • 1 cup carrots, diced
  • 1 cup celery, diced
  • 1 cup onion, diced
  • 1 cup frozen peas
  • 1 cup cream
  • 1 teaspoon thyme
  • Salt and pepper to taste
  • 1/4 cup flour
  • 2 tablespoons butter

Instructions

  1. Sauté the vegetables: In a large pot, melt the butter over medium heat. Add the onions, carrots, and celery; cook until softened, about 5-7 minutes.
  2. Add the flour: Stir in the flour and cook for another minute to develop a bit of flavor.
  3. Incorporate the broth: Slowly whisk in the chicken broth until smooth, ensuring there are no lumps.
  4. Season the soup: Add the shredded chicken, thyme, salt, and pepper to the pot. Mix well.
  5. Simmer: Bring the mixture to a simmer. Allow it to cook for 15 minutes, letting the flavors meld together.
  6. Finish with cream: Stir in the cream and frozen peas, cooking until heated through, about 3-5 minutes.
  7. Serve: Spoon the soup into bowls and enjoy hot.

Notes

For thicker soup, add more flour or let it simmer longer to reduce. Adjust seasonings to taste.
