A heartwarming dish combining tender chicken and fluffy dumplings in a rich broth, perfect for cold evenings.

Ingredients

  • 2 cups cooked roasted chicken, shredded
  • 4 cups chicken broth
  • 1 cup buttermilk
  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup unsalted butter, melted
  • 1 egg
  • 1/4 cup chopped chives (optional)

Instructions

  1. Heat the broth: In a large pot, bring the chicken broth to a gentle simmer over medium heat. Add the shredded roasted chicken, allowing it to warm through.
  2. Mix dry ingredients: In a separate bowl, whisk together the flour, baking powder, salt, and black pepper.
  3. Combine wet ingredients: In another bowl, whisk together the buttermilk, melted butter, and egg until well combined.
  4. Create the dough: Gently fold the wet ingredients into the dry ingredients until just combined. Fold in the chopped chives if using.
  5. Drop in dumplings: Once the broth is simmering, drop spoonfuls of the dumpling dough into the pot. Cover and cook for 15-20 minutes.
  6. Serve: Ladle the soup and dumplings into bowls and serve hot.

Notes

Use leftover chicken for enhanced flavor and convenience. Monitor the heat while cooking the dumplings to ensure they remain fluffy.
