A comforting and warm chicken noodle soup reminiscent of the beloved cafe style, perfect for cozy nights or when you’re feeling under the weather.

Ingredients

  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 2 carrots, sliced
  • 2 celery stalks, sliced
  • 3 cloves garlic, minced
  • 8 cups chicken broth
  • 2 cups cooked chicken, shredded
  • 1 teaspoon dried thyme
  • 1 teaspoon dried parsley
  • 8 ounces egg noodles
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Sauté the veggies: In a large pot, heat olive oil over medium heat. Add onion, carrots, and celery, cooking until softened, about 5-7 minutes. Stir in garlic and cook for an additional minute until fragrant.
  2. Add the chicken broth: Pour in the chicken broth and bring the mixture to a boil.
  3. Incorporate chicken and herbs: Add the shredded chicken, dried thyme, and parsley to the pot. Stir to combine and allow the flavors to meld.
  4. Cook the noodles: Add the egg noodles and cook according to package instructions, usually around 6-8 minutes, or until they are tender.
  5. Season: Finally, season the soup with salt and pepper to taste.
  6. Serve: Ladle the soup into bowls and garnish with fresh parsley. Serve hot.

Notes

Do not overcook the noodles; taste a noodle a minute before the time is up to ensure they remain al dente.
