A heartwarming classic that warms your soul and nourishes your body, perfect for cozy evenings.

Ingredients

  • 1 pound chicken breast
  • 2 cups egg noodles
  • 2 carrots, sliced
  • 2 celery stalks, chopped
  • 1 onion, diced
  • 6 cups chicken broth
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried thyme
  • 2 tablespoons olive oil

Instructions

  1. Sauté the vegetables: In a large pot, heat the olive oil over medium heat. Add the diced onion, carrots, and celery, then sauté for about 5 minutes until softened.
  2. Cook the chicken: Add the chicken breast to the pot and cook for an additional 5 minutes, stirring occasionally to ensure even cooking.
  3. Add broth and seasoning: Pour in the chicken broth, salt, black pepper, and dried thyme. Bring the mixture to a boil.
  4. Simmer the soup: Reduce the heat and let the soup simmer for about 20 minutes, or until the chicken is fully cooked (internal temperature should reach 165°F).
  5. Shred the chicken: Remove the chicken breast from the pot, shred it with two forks, and then return it to the soup.
  6. Cook the noodles: Add the egg noodles to the pot and cook according to package instructions, usually about 6-8 minutes.
  7. Serve: Ladle the soup into bowls and enjoy hot!

Notes

For a quicker dish, you can use rotisserie chicken instead. Feel free to add other veggies like peas or corn for added nutrition and flavor.
