A delightful and comforting soup that combines traditional chicken piccata flavors with a hearty broth and tender orzo pasta.

Ingredients

  • 1 cup orzo pasta
  • 2 cups cooked chicken, shredded
  • 4 cups chicken broth
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 2 tablespoons lemon juice
  • 1 teaspoon lemon zest
  • 1/2 cup capers, fried
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Sauté onion and garlic in olive oil until softened, about 3-4 minutes.
  2. Pour in chicken broth and bring to a boil. Add orzo pasta and cook according to package instructions, about 8-10 minutes.
  3. Stir in chicken, heavy cream, lemon juice, and lemon zest. Season with salt and pepper to taste.
  4. Let the soup simmer for a few minutes until heated through and orzo is tender.
  5. Ladle soups into bowls, top with fried capers, and garnish with fresh parsley.
