Chicken Noodle Soup is the ultimate comfort food, perfect for cozy evenings or when you need a warm hug in a bowl. Packed with tender chicken, soft noodles, and vibrant vegetables, it creates a satisfying meal that everyone will love.

Ingredients

  • 1 tablespoon oil
  • 1 onion, diced
  • 2 carrots, diced
  • 2 stalks celery, diced
  • 4 cups chicken broth (or chicken stock)
  • 2 cups cooked chicken, sliced
  • 1 teaspoon poultry seasoning
  • 2 cups egg noodles (gluten-free for gluten-free option)
  • 1/2 lemon, juice (optional)
  • Salt and pepper to taste
  • 1 handful parsley, chopped

Instructions

  1. Sauté the vegetables: Heat the oil in a large stock pot over medium-high heat. Add the diced onion, carrots, and celery. Cook for about 8-10 minutes until the vegetables are tender and the onion is translucent.
  2. Add the broth: Pour in the chicken broth and add the sliced chicken along with the poultry seasoning. Bring the mixture to a boil, then reduce the heat and let it simmer for 5 minutes.
  3. Cook the noodles: Add the egg noodles to the pot and continue simmering until they are just tender, approximately 5 minutes.
  4. Season and garnish: Taste the soup and season with salt and pepper as needed. Stir in the chopped parsley and, if desired, squeeze in the juice of half a lemon for brightness.

Notes

For a slow cooker option, place everything except the noodles, and parsley in the slow cooker. Cook on low for 6-10 hours or high for 2-4 hours. Add the noodles before serving.
