A delightful Chicken Lo Mein recipe featuring tender chicken, vibrant vegetables, and savory egg noodles tossed in a flavorful sauce, perfect for busy weeknights.

Ingredients

  • 8 oz egg noodles
  • 1 lb chicken breast, sliced into thin strips
  • 2 cups mixed vegetables (bell peppers, carrots, broccoli)
  • 3 tablespoons soy sauce
  • 2 tablespoons vegetable oil
  • 2 cloves garlic, minced
  • 1 teaspoon ginger, minced
  • Salt and pepper to taste

Instructions

  1. Cook the noodles: Bring a pot of water to a boil. Cook the egg noodles according to package instructions, then drain and set aside.
  2. Prepare the skillet: In a large skillet, heat the vegetable oil over medium heat.
  3. Sauté aromatics: Add minced garlic and ginger to the skillet. Sauté for about 1 minute until fragrant, but be careful not to burn them.
  4. Cook the chicken: Add the sliced chicken to the skillet and cook until browned and cooked through, about 5-7 minutes. Ensure the chicken reaches a safe internal temperature of 165°F (75°C).
  5. Add vegetables: Stir in the mixed vegetables and continue to stir-fry for about 3-4 minutes, until they are tender-crisp.
  6. Incorporate the sauce: Pour the soy sauce over the mixture and stir to combine, ensuring everything is evenly coated.
  7. Combine noodles: Add the cooked egg noodles to the skillet and toss everything together until heated through, for about 2 more minutes.
  8. Season and serve: Taste and season with salt and pepper to your preference. Serve immediately while hot.

Notes

Feel free to use fresh or frozen mixed vegetables. For a low-sodium option, use low-sodium soy sauce.
