Ingredients

  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 bell pepper, chopped
  • 2 cups cooked chicken, shredded
  • 1 can (15 oz) black beans, rinsed and drained
  • 1 can (15 oz) diced tomatoes with green chilies
  • 4 cups chicken broth
  • 1 cup corn (fresh, canned, or frozen)
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1/2 cup heavy cream
  • Salt and pepper to taste
  • Fresh cilantro, for garnish

Instructions

  1. Sauté the vegetables: In a large pot, heat the olive oil over medium heat. Add the chopped onion, bell pepper, and garlic. Cook for about 5 minutes, until softened and fragrant.
  2. Combine the main ingredients: Stir in the shredded chicken, black beans, diced tomatoes, corn, chicken broth, cumin, and chili powder. Bring the mixture to a gentle simmer.
  3. Add cream for richness: After about 10 minutes of simmering, reduce the heat to low and stir in the heavy cream. Allow the soup to heat through for another 5 minutes.
