Ingredients
1 cup cooked chicken, shredded
1 cup cabbage, finely shredded
1/2 cup carrots, grated
1/4 cup green onions, chopped
1 teaspoon garlic, minced
1 teaspoon soy sauce
1/2 teaspoon salt
1/4 teaspoon pepper
10 egg roll wrappers
Oil for frying
1/2 cup sugar
1/2 cup vinegar
1/2 cup ketchup
2 tablespoons soy sauce
1 tablespoon cornstarch mixed with 2 tablespoons water
Instructions
Prepare the Filling: In a mixing bowl, combine the shredded chicken, cabbage, carrots, green onions, garlic, soy sauce, salt, and pepper. Mix until fully incorporated.
Wrap the Egg Rolls: Lay an egg roll wrapper flat on a clean surface, with one corner facing you. Place 2-3 tablespoons of the filling in the center. Fold the two sides over the filling, then roll it up tightly from the bottom, sealing the edges with a little water.
Fry the Egg Rolls: Heat oil in a large pan over medium-high heat. Carefully add the egg rolls to the hot oil, frying until they are golden brown on all sides. Remove them from the pan and drain on paper towels.
Make the Sweet and Sour Sauce: In a small saucepan, combine the sugar, vinegar, ketchup, soy sauce, and cornstarch mixture. Cook over medium heat, stirring until the sauce thickens.
