A delightful, comforting dish that combines tender chicken, sweet corn, and creamy goodness, perfect for chilly days.

Ingredients

  • 2 cups cooked chicken, shredded
  • 4 cups corn (fresh, frozen, or canned)
  • 2 medium potatoes, diced
  • 1 medium onion, diced
  • 4 slices bacon, chopped
  • 4 cups chicken broth
  • 1 cup heavy cream
  • Salt and pepper to taste
  • Green onions for garnish

Instructions

  1. Cook the bacon in a large pot over medium heat until crispy. Remove and set aside, leaving the bacon fat in the pot.
  2. Add the diced onion to the pot and sauté until translucent, about 4-5 minutes.
  3. Cook the diced potatoes and chicken broth together; bring to a boil, then reduce to a simmer until the potatoes are tender, about 15 minutes.
  4. Stir in the corn and shredded chicken; cook for an additional 5-10 minutes until hot and bubbly.
  5. Slowly add the heavy cream and season with salt and pepper; stir to combine and heat through for 2-3 minutes without boiling.
  6. Serve hot, topped with crispy bacon and chopped green onions.

Notes

Using fresh corn enhances flavor, but frozen or canned is a convenient alternative.
