A warm and hearty Chicken and Wild Rice Soup, perfect for chilly days, combining tender chicken, nutty wild rice, and fresh vegetables in a creamy broth.

Ingredients

  • 1 cup wild rice
  • 1 pound cooked chicken, shredded
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 carrots, sliced
  • 2 celery stalks, sliced
  • 3 cloves garlic, minced
  • 6 cups chicken broth
  • 1 teaspoon thyme
  • 1 cup heavy cream
  • Salt and pepper to taste
  • Chopped parsley for garnish

Instructions

  1. Sauté the olive oil over medium heat. Add the chopped onions, sliced carrots, and sliced celery. Cook until tender, about 5 minutes.
  2. Stir in the minced garlic and thyme, cooking for another minute until fragrant.
  3. Pour in the chicken broth and add the wild rice. Bring to a boil.
  4. Reduce the heat and let simmer for about 45 minutes, or until the wild rice is tender.
  5. Stir in the shredded chicken and heavy cream. Season with salt and pepper. Cook until heated through, about 5 minutes.
  6. Ladle the soup into bowls and garnish with chopped parsley. Enjoy!

Notes

For a lighter version, substitute half of the cream with milk. Use homemade broth for richer flavor.
