Ingredients

  • 1 lb. chicken breast, diced
  • 2 medium carrots, chopped
  • 2 celery stalks, chopped
  • 1 small onion, chopped
  • 3 cloves garlic, minced
  • 6 cups chicken broth
  • 2 cups egg noodles
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon dried thyme
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. Sauté the vegetables: In a large pot, heat olive oil over medium heat. Add chopped onions, garlic, carrots, and celery. Sauté until softened, about 5 minutes.
  2. Cook the chicken: Add the diced chicken breast to the pot and cook until no longer pink, about 5-7 minutes. Stir occasionally to ensure it cooks evenly.
  3. Add broth: Pour in the chicken broth and bring the mixture to a boil. This enhances the richness of the soup.
  4. Incorporate noodles and seasoning: Stir in the egg noodles, thyme, salt, and pepper. Reduce heat to a simmer.
