Ingredients

  • 1 tbsp butter
  • 1 large onion, chopped
  • 1 tbsp minced garlic
  • 1/2 cup shredded carrots
  • 2 tbsp flour
  • 2 cups chicken broth (or vegetable broth for vegetarian option)
  • Salt and pepper to taste
  • 1/2 tbsp smoked paprika
  • 1 cup chopped raw broccoli
  • 1 cup milk (whole, skim, or dairy-free alternative)
  • 1/2 cup shredded white cheddar

Instructions

  1. Melt the butter in a large pot over medium heat until bubbly.
  2. Sauté the chopped onion and minced garlic for about 5 minutes until translucent.
  3. Incorporate the shredded carrots and flour, cooking for another minute to coat the vegetables.
  4. Add the chicken broth gradually while stirring to avoid lumps.
