Chicken Chowder

A comforting, hearty chowder made with tender chicken, fresh vegetables, and a creamy broth, perfect for any season.

Ingredients

  • 8 sprigs fresh thyme
  • 1 medium head cauliflower (broken into florets, about 6 cups)
  • 12 ounces small yellow potatoes (scrubbed and cut into bite-size pieces)
  • 12 ounces carrots (sliced about 1/4-inch thick, about 6 medium or 3 cups)
  • 2 stalks celery (halved and thinly sliced)
  • 5 cups low sodium chicken broth
  • 2 bay leaves
  • 2 teaspoons garlic salt
  • 2 teaspoons onion powder
  • 1 teaspoon kosher salt
  • 3 tablespoons butter
  • 3 tablespoons all-purpose flour
  • 2 cups milk (whole milk preferred, but 2% will also work)
  • 4 ounces shredded sharp cheddar cheese
  • Kosher salt and freshly ground pepper to taste
  • 2½-3 cups leftover or rotisserie chicken (or turkey), cut or torn into bite-size pieces

Instructions

  1. Sauté the vegetables: In a large pot, melt 3 tablespoons of butter over medium heat. Add the sliced celery, carrots, and potatoes, cooking for about 5-7 minutes or until they begin to soften.
  2. Add cauliflower and broth: Stir in the cauliflower florets, chicken broth, bay leaves, garlic salt, onion powder, and kosher salt. Bring the mixture to a boil, then reduce the heat to a simmer. Let it cook for about 15 minutes, or until the vegetables are tender.
  3. Create the roux: In a separate bowl, make the beurre manié by mixing 3 tablespoons of flour with a little milk to form a paste. This will help thicken your chowder.
  4. Make it creamy: Slowly whisk in the remaining milk into the soup, and then add in the beurre manié. Stir continuously until the chowder begins to thicken, about 5 minutes.
  5. Add cheese and chicken: Stir in the shredded cheddar cheese until melted and integrated, then add the cooked chicken, heating until warmed through.
  6. Season to taste: Before serving, taste and adjust seasonings with additional salt and pepper if needed.

Notes

Consider adding corn, green beans, or peas for additional color and texture. Serve with crusty bread or salad for a complete meal.
