Ingredients

  • 2 boneless, skinless chicken breasts, sliced
  • 2 cups chow mein noodles
  • 1 cup bell peppers, sliced
  • 1 cup carrots, julienned
  • 1 cup broccoli florets
  • 2 cloves garlic, minced
  • 1 tablespoon ginger, minced
  • 3 tablespoons soy sauce
  • 2 tablespoons oyster sauce
  • 1 tablespoon cornstarch
  • 1 tablespoon vegetable oil
  • Salt and pepper to taste
  • Green onions, sliced for garnish

Instructions

  1. Cook the chow mein noodles according to package instructions, drain, and set aside.
  2. Heat the vegetable oil over medium-high heat in a large pan or wok.
  3. Sauté the minced garlic and ginger for about 30 seconds until fragrant.
  4. Cook the sliced chicken, season with salt and pepper, and cook until no longer pink, about 5-6 minutes.
  5. Add the sliced bell peppers, carrots, and broccoli; stir-fry for about 3-4 minutes until tender yet crisp.
  6. Prepare the sauce by mixing soy sauce, oyster sauce, and cornstarch with a little water in a small bowl.
  7. Combine everything by pouring the sauce over the chicken and vegetables.
  8. Add the cooked chow mein noodles to the pan, tossing everything together to coat the noodles with the sauce.
  9. Serve hot, garnished with sliced green onions.

Notes

Ensure your pan is hot before adding ingredients and avoid overcrowding to achieve the best stir-fried finish.
