A warm and aromatic Vietnamese noodle soup combining tender beef, rich broth, and silky rice noodles, perfect for any meal.

Ingredients

  • 8 oz dried rice noodles
  • 8 oz beef slices (such as brisket or sirloin), thinly sliced
  • 4 cups beef broth
  • 1 onion, quartered
  • 2 slices fresh ginger
  • 1 cinnamon stick
  • 2 star anise
  • 3 cloves
  • 2 tbsp fish sauce
  • Salt to taste
  • Cilantro, for garnish
  • Basil, for garnish
  • Lime wedges
  • Bean sprouts

Instructions

  1. Soak the noodles in a bowl with warm water for about 15 minutes or until softened.
  2. Bring the beef broth to a gentle boil in a large pot.
  3. Add the quartered onion, ginger, cinnamon stick, star anise, and cloves to the boiling broth and let it simmer for 15-20 minutes.
  4. Strain the broth to remove solids and return it to the pot, then add fish sauce and salt to taste.
  5. Prepare serving bowls with soaked noodles and top with raw beef slices.
  6. Finish by pouring hot strained broth over the noodles and beef.
  7. Serve with fresh herbs, lime wedges, and bean sprouts to customize.

Notes

Ensure beef is sliced thinly for quick cooking. Adjust the seasoning after tasting the broth.
