A comforting and nutritious soup featuring tender chicken and cauliflower in a creamy broth, ready in just 30 minutes.

Ingredients

  • 1 head of cauliflower, chopped
  • 1 pound of chicken breast, diced
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 1 teaspoon turmeric
  • 1 teaspoon ginger, grated
  • Salt and pepper to taste
  • Olive oil for cooking
  • Fresh parsley for garnish

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Sauté the diced onion and minced garlic for about 3-4 minutes, until softened and aromatic.
  3. Cook the diced chicken breast for 5-7 minutes, stirring occasionally, until browned.
  4. Add the chopped cauliflower, turmeric, ginger, salt, and pepper, stirring well to combine.
  5. Pour in the chicken broth and bring to a boil.
  6. Simmer for about 20 minutes, or until the cauliflower is tender.
  7. Blend the soup until smooth with an immersion blender or regular blender.
  8. Serve the soup hot, garnished with freshly chopped parsley.

Notes

Feel free to substitute chicken with canned chickpeas for a vegetarian option, and use vegetable broth for a deeper flavor.
