A warm, homemade Pumpkin Bread recipe, infused with fall spices that is simple to make and incredibly moist.

Ingredients

  • 1 cup pumpkin puree (canned or homemade)
  • ½ cup vegetable oil (or melted coconut oil)
  • 1 cup granulated sugar
  • ½ cup brown sugar (packed)
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon baking powder
  • ½ teaspoon salt
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground nutmeg
  • ¼ teaspoon ground ginger (optional)
  • ½ cup chopped nuts (e.g., walnuts or pecans)
  • ½ cup chocolate chips

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9×5-inch loaf pan.
  2. Mix the pumpkin puree, vegetable oil, granulated sugar, brown sugar, eggs, and vanilla in a large bowl until smooth.
  3. Combine the flour, baking soda, baking powder, salt, cinnamon, nutmeg, and ginger in a separate bowl.
  4. Fold the dry mixture into the wet mixture until just combined.
  5. Add in the optional nuts or chocolate chips if using.
  6. Pour the batter into the prepared loaf pan and bake for 60-70 minutes.
  7. Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

Notes

For best results, use well-pureed fresh pumpkin and measure the flour accurately.
